Easy Udon Stir Fry


If you guys have been long-time readers of ours you know I'm a huge fan of easy one-pot quick meals. And this one is super delicious and flavourful. My youngest is absolutely obsessed and is super picky. She only eats this particular noodle dish, I've told her she's going to turn into an udon noodle LOL.


With a handful of ingredients, this stir fry comes together in a few minutes. It's a great recipe to go to if you're in a pinch and don't know what to make but still want something healthy, flavourful, and with lots of veggies.


INGREDIENTS:

- 2 packages of udon noodles

- 2 cups of veggies (I used napa cabbage) you can add any you like

- 2 cups of protein (the great thing about this dish is it's so versatile, use any protein you like)

- 3 cloves of garlic

- half a small onion

- 2 sprigs of green onions

- 1 tbsp vegetable oil

- 2 tbsp oyster sauce

- 1 tbsp soy sauce

- 1 tbsp brown sugar

- 1 tbsp rice vinegar

DIRECTIONS:

  1. In a large pot fill it with water and bring to boil. Once the pot comes to a rolling boil add in udon noodles. Cook for about two minutes and drain. Set aside.

  2. In a large wok or skillet. Add vegetable oil. Add in garlic, onions, and half of the green onions.

  3. Once aromatics are slightly cooked add in your protein of choice. Cook till protein is golden. Add in your par-cooked udon noodles. Mix the ingredients together.

  4. Add in your remaining ingredients. Stir fry for another 5 minutes and serve. Garnish with remaining green onions and enjoy.
