Stir-Fried noodles & Dumplings


This stir fry noodle dish is usually on our menu at least once a week. A super easy meal that comes together in under 20 minutes. It'sthat's definitely a great dish to have in rotation during a busy week thats full of flavour.




INGREDIENTS:

- 250 grams of Egg Noodles or any other Asian Noodles

- 200 grams of chicken (or any protein you like)

- 2 tablespoons of Cooking Oil

- 2 tablespoons Garlic Minced

- 4-5 Green Onions white and green parts separated


for stir-fry sauce

- ¼ cup Soy sauce

- 2 tablespoons Oyster Sauce

- 1 tablespoon of Sugar

- ½ teaspoon of Pepper

- ¼ cup low sodium chicken stock or water


for dumpling

- 200 grams of ground chicken

- 200 grams of shrimp (peeled & deveined)

- 1 tsp salt & pepper

- 1 package of wonton wrappers

- 1 tbsp of oil

- 2 egg

- 1 tbsp water

- 2 tbsp oyster sauce

- 100 grams of glass noodles

- half an onion (finely chopped)




DIRECTIONS:

for stir fry:

  1. In a mixing bowl, pour in all stir fry sauce ingredients and mix well. Set aside.

  2. Boil a large pot of water and cook chow mien noodles. Undercook the noodles for about 3 minutes. Drain, rinse under running tap water, drain and set aside.

  3. Heat a skillet and add oil. Once the oil is hot, add minced garlic until garlic is golden.

  4. Add in the protein of your choice. Stir fry for a few minutes until the chicken starts turning golden brown.

  5. Add in sauce and stir vigorously for a minute. Add in drained chow mien noodles and mix everything till combined. Add the whites of the green onions. Stir for another 2 minutes.

  6. Turn off the heat. Plate the noodles and garnish with the green onions.



for dumpling:

  1. In a large skillet. Add in oil, and let the oil heat up.

  2. Add in ground chicken. Season with salt, pepper, and oyster sauce. Cook until ground chicken is thoroughly cooked. Set aside and let the ground chicken cool.

  3. Boil some water and cook glass noodles according to package directions. Once cooked. Drain and set aside.

  4. Chop up deveined and peeled shrimp. Place into a large mixing bowl.

  5. Finely chop half an onion and place into the large mixing bowl

  6. Roughly chop the cooled glass noodles and place them into the large mixing bowl.

  7. Add 1 large egg into the large mixing bowl. Mix all the ingredients in the mixing bowl thoroughly. And set aside.

  8. Mix one large egg and water for an egg wash.

  9. While shrimp/chicken mixture is in the fridge. Open the package of wonton noodles and start separating the wonton wrapper sheets from one another.

  10. Take out the shrimp/chicken mixture from the fridge. And layout the wonton wrappers. Using a tablespoon. Scoop up the mixture. Place onto a wonton wrapper. Now tap your fingers into the egg wash and place it on the edges of the wonton wrapper.

  11. Fold over the wonton wrapper onto itself and tightly seal the edges.

  12. In a preheated crockpot, slowly place in the filled wonton wrappers. Don't cook too much at once or it'll change the temp in the oil (you don't want to crowd the frying)

  13. Cook each side till golden brown. Place onto a wire rack to cool.

  14. Serve and eat with your favourite plum sauce.
